Earthy, peppery flavor and can retain their shape or easily be pureed. Excellent source of B vitamins, iron, magnesium, and zinc. They don't need to be soaked, but it will lower the cook time. Cook with 3 cups water to 1 cup lentils. Rinse lentils, bring water to a rolling boil, add lentils. Simmer for 15-20 minutes or until desired tenderness. Origin: ID, USA
